Eating well plan
Really trying to lose these last few Dory pounds (4 years later still, LOL). And honestly just feel more high energy. Here's my plan for breakfasts and lunches:
Breakfasts
- Greek yogurt bowl (Greek yogurt, berries, granola)
- Greek yogurt with berries + baguette with butter
- Sourdough toast with chicken sausage + berries (toast with peanut butter, butter & salt, or avocado)
- Oatmeal with walnuts, blueberries, and half-and-half
- Eggs with toast + berries or fruit (toast with peanut butter, butter & salt, or avocado)
Lunches / Pool Dinners
- Snack plate (cottage cheese, hard-boiled egg, veggies, fruit, crackers/pretzels/baguette)
- Veggie omelet with toast and fruit
- Turkey sandwich with veggies, pretzels, and fruit
- Hummus and veggie sandwich or wrap with fruit and pretzels
- Strawberry basil salad (greens, chicken or salmon, strawberries, basil, feta/goat cheese, walnuts)
- Southwest salad (greens, chicken, black beans, corn, tomatoes, avocado, salsa, tortilla strips)
Weekly Dinners
- Monday: Kids' Choice Night (Joan cooks!)
- Tuesday: Taco bowls (or tacos/burritos at the pool)
- Wednesday: Pasta night + salad
- Thursday: Pizza night + salad
- Friday: Grain bowl (chicken or salmon, roasted vegetables, rice/quinoa/farro, sauce)
- Saturday: Grill night or pool picnic (burgers, chicken, salmon, sandwiches, leftovers, or takeout)
- Sunday: Sheet pan or slow cooker dinner (roast chicken, salmon, pork tenderloin, or soup) + prep extra protein, vegetables, and grain for the week
Then I just need to stick to my eating schedule:
- Coffee with collagen
- Breakfast between 7-9
- Lunch between 12-1
- Afternoon snack around 3 (kids after school) -- yogurt and berries as the default
- Dinner at 6
I really need more of a prescription like this, not counting calories which I despise. It's much easier for me to follow a hard and fast rule than to try to do whatever and calculate it as I go. Dinner will also be the trickiest, because we often go to the pool. But I guess we'll just bring a snacky dinner or pack whatever the plan was? I'm home so this can totally work fine. I just need to think about it early in the day. I guess that day I'll know what the weather is, so I'll know if we are going to the pool or not.
Or I should just let myself get the strawberry basil salad for dinner!! I should have done that last night -- but I was trying to save money. And also possibly no booze until I shed the last few pounds. It's giving me allergies anyway every time!
